My husband and I have been separated, sleeping in separate bedrooms since April 29. Is it adultery if one of us starts another relationship before we have a separation agreement signed?

Technically it is adultery if either of you have a sexual relationship with someone even after 20 years of living in separate home (it is only not adultery if it occurs after a divorce has been granted). However there are no legal ramifications to either party engaging in adultery – other than being one of the grounds for obtaining a divorce order (but since being separate and apart for one year or more (even if living under the same roof) is also grounds for a divorce, adultery has no real relevance to any substantive issue).
